Cucumber Salad with Peanut Lime Vinaigrette

This crisp salad is so light and fresh. The cool cucumbers combine well with the tangy vinaigrette. With only a few ingredients, this salad comes together in just a few minutes. For an extra special flavor, use honey roasted peanuts and crush them yourself instead of the regular packaged chopped nuts.
- Ingredients
- 1 large English cucumber, thinly sliced
- 4 tablespoons lime juice
- 2 tablespoons sesame oil
- 2 tablespoons peanut butter (smooth or chunky)
- 1 teaspoon sugar
- Salt & pepper to taste
- 2 tablespoons chopped fresh cilantro (for garnish)
- 2 tablespoons chopped peanuts (for garnish)
Directions:
Combine the ingredients for the vinaigrette in a small bowl and place into the microwave for 1 minute to melt the peanut butter and dissolve the sugar. Stir and chill until ready use. If using fresh peanuts or honey roasted nuts, place them into a ziplock bag and crush using a mallet or meat pounder. Arrange cucumbers on a plate and top with dressing. Garnish with chopped nuts and cilantro, if desired.
