Dark Chocolate Chip Cookies
Chocolate chip cookies are always a crowd pleaser. But traditionally they don’t offer much in the nutrition department. This recipe is a little healthier than normal thanks to three ingredients; the flour used, the reduction in sugar and the dark chocolate. The result is a semi-sweet cookie which is moist and satisfying without overdoing it.
- 2 cups Nutri Flour Blend
- 1 cup brown sugar
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 cup coconut oil, melted
- 2 eggs, beaten
- 1 tablespoon vanilla extract
- 1 cup dark chocolate chips

Preheat the oven to 375 degrees. Line a cookie sheet with parchment paper. In a large bowl mix together the flour, sugar, salt & baking soda until well blended. Add the oil, egg and vanilla and stir. The dough will appear drier than usual (this is normal). Fold in the chocolate chips. Using your hands, form the dough into small balls and place onto a cookie sheet. Flatten slightly. Bake on the middle oven rack for 10-15 minutes or until the edges are slightly crispy. Remove from the oven and allow to cool. The cookies will continue cooking for another few minutes while they come to room temperature. Makes 1 dozen large cookies.
