Double Chocolate Banana Bread
This recipe is decadent without being too sweet and the addition of whole wheat flour instead of using bleached white flour adds a little extra nutrition. I used a mini loaf pan which makes these little goodies very easy to transport. You can use a muffin tin instead if you like the individual servings. A tip I love for making anything with bananas is to cook them in the microwave for 1-2 minutes to make them extra soft and bring out their natural sugars. This is especially helpful if your bananas are not completely ripe.
- Ingredients:
- 3 ripe bananas, mashed
- 1/2 cup vegetable or coconut oil
- 1/2 cup vanilla yogurt
- 1 cup sugar
- 3 cups whole wheat flour
- 1/2 cup cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 2 cups semi-sweet or dark chocolate chips

Preheat the oven to 350 degrees. Grease a loaf pan or mini loaf pan with butter or cooking spray. Combine the ingredients one by one and mix well. Fill the pan(s) and place on the middle rack. Bake for 20 minutes for the mini loaves, or up to 30 minutes for a full sized loaf pan or until a toothpick inserted into the center comes out clean. Cool completely before serving.
