Fat Free Eggless Eggnog
I am not a huge fan of consuming raw eggs, and obviously, they are the main ingredient of traditional eggnog. It is also very high in saturated fat, with some varieties containing up to 20 grams per serving! And yet I love the taste of eggnog. On it’s own, in lattes, smoothies, or in desserts. This recipe not only excludes eggs altogether, it is also fat free when you use skim milk. A total win-win! However, you can adjust the eggnog by using whichever milk you like. Almond or soy milk is also very tasty. Although vanilla extract is added mainly for color in this recipe, you can further enhance the flavor by adding different types of extracts. Peppermint, almond or banana are great additions. I love serving this with Spiced Rum.
- Ingredients
- 12 cups skim milk (or milk of your choice)
- 2 packages of instant vanilla pudding mix
- 1 tablespoon vanilla extract
- 1 teaspoon nutmeg
- 1 tablespoon peppermint, almond or banana extract (optional)
- Spiced Rum (optional)
Directions:
Place the pudding mix into a bowl and add the extracts of your choice. Slowly pour the milk into the bowl and whisk thoroughly until smooth. Refrigerate for 30 minutes or until until thickened. Pour into glasses and sprinkle with nutmeg.
