Gingerbread Pancakes

These delicious pancakes are perfect to make during the holidays with their beautiful aroma and deep caramel color. To make life easy I use whole wheat pancake mix, but if you prefer to make your pancakes from scratch then you can just add the spices to your own recipe.

  • Ingredients
  • 4 cups whole wheat pancake mix
  • 1 cup milk
  • 2 eggs
  • 1/2 cup molasses
  • 1/2 cup ground flax (optional)
  • 4 teaspoons ground ginger
  • 2 teaspoons cinnamon
  • 2 teaspoons ground cloves
  • 2 teaspoons nutmeg

Directions:

In a large bowl, combine all the ingredients thoroughly. Heat a skillet to medium-high and using a ladle, scoop pancake mixture onto the skillet and cook for approx 3-4 minutes per side until golden. Serve with fruit or your favorite toppings.
