Green Apple Smoothie

This smoothie has such a refreshing taste due to the ginger and the mint. Together, they enhance the beautiful green apple flavor without being too overpowering. The spinach and lemon provide extra vitamins and if you leave the skin on the apples this smoothie becomes very high in fiber as well. If you go this route, you will need to blend it longer. I like to use fresh apple juice to enhance the nutrition and the taste but you can use regular apple juice or water if you like.

  • Ingredients
  • 2 green apples, chopped
  • 1 cup spinach leaves
  • Juice of 1 lemon
  • 1/2 cup mint leaves
  • 1 tablespoon fresh ginger, peeled and chopped
  • 1 cup apple juice
  • 1 cup ice

Directions:

Place the apples, spinach and juice in a blender and puree until totally smooth. Add remaining ingredients and puree on high for 2-3 minutes more.
