Grilled Chicken with a Smoky Blueberry Glaze
This recipe has only a few ingredients and comes together in minutes. The chicken can be made on the grill or in the oven but I love the smoky flavor when I cook this on the barbecue.
- Ingredients
- 4 chicken breasts
- 1 cup maple syrup
- 1 cup fresh or frozen blueberries, thawed
- 1 cup hickory flavoured BBQ sauce
- 1 garlic clove, minced
- 1 teaspoon dried oregano
- Salt & Pepper to taste
directions:
Place all the ingredients for the sauce into a blender and puree until smooth. Place chicken in a shallow dish and pour over half of the sauce. Marinate the chicken for 15 minutes to 1 hour. Preheat the grill to medium and add the chicken. Cook for 5 minutes, turn over and cook for an additional 5 minutes, brushing with the sauce. After 10 minutes check to ensure the meat is cooked all the way through. Transfer to a plate. Drizzle with additional sauce and a few fresh blueberries if desired.
