Grilled Lemon Chicken

This recipe is so quick and simple, it’s perfect for a weekday meal and leftovers are excellent in salads. The tasty lemon marinade works well with chicken and can also be used with pork or fish. The longer you can marinate the meat, the stronger the flavor will be and in this recipe, the marinade doubles as a dipping sauce once the meat is cooked.
- Ingredients
- 4 chicken breasts
- 1 cup olive oil
- 2 lemons, zested and juiced
- 2 garlic cloves, minced
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1 teaspoon pepper
Directions
Combine all the ingredients of the lemon sauce and divide in half. Pour one portion into a large ziplock bag and add the chicken. Marinate for as long as possible, up to 24 hours before you are ready to grill. Heat your barbecue to medium heat and when it is hot, oil the grill so the chicken will not stick. Place the remaining marinade into a small saucepan and bring to a simmer until ready to use. Meanwhile, place the chicken breasts onto the grill and cook for 4-5 minutes (thicker portions might need an extra minute or two). Baste with marinade and turn over. Grill for an additional 2-3 minutes until cooked thoroughly. Remove from grill and serve with warm lemon sauce drizzled on top.
