Mediterranean Pasta
The ingredients in this dish are very rich but the flavors blend well together. It travels well and can be served warm or chilled. This version is vegetarian but you can add cooked chicken or prawns if desired.
Directions:
Cook pasta in plenty of salted water, drain and return to pot. Turn heat down to low and add pesto. Combine thoroughly with pasta. Mix in feta cheese, artichokes, olives & sun-dried tomatoes. Stir pasta over low heat until cheese is slightly melted and all ingredients are heated through.

Made this one with shrimp…. Amazing! If you aren’t a fan of some of the ingredients don’t be afraid to still try it. The combination works so well that I didn’t even notice the sundried tomatoes. So delicious!!
