Mexican Tostadas

Tostadas are essentially open faced tacos and you can use the same fillings you would normally use in Mexican cooking. For this vegetarian version I am using refried beans as my base. They are high in protein and fiber and low in fat which make them a perfect start to this dish. I have also used ground beef, sauteed shrimp and pulled pork in this recipe. Use what you have in your house and whip up your perfect tostada.

  • Ingredients
  • 1 can refried beans
  • 1 cup shredded cheese
  • 1 cup tomatoes, diced
  • 1 cup black olives
  • 1/4 cup fresh cilantro, chopped
  • Salsa (optional)
  • Sour cream (optional)

Directions:

Place the refried beans in a bowl and warm in the microwave for 2-3 minutes until hot. Spread a thin layer onto each tostada. Top with cheese, tomatoes, olives and cilantro. Serve with sour cream and salsa if desired.
