Nasi Gorang (Indonesian Fried Rice)
Nasi Goreng is an Indonesian fried rice dish that has such a complex flavor and texture, and yet is so simple to prepare. The ingredients list is long but the majority of the items on it are spices. You can also switch up the fruits and veggies according to whatever you have on hand. It’s a great way to use up leftover rice and turn it into a completely different meal. This version is vegetarian and can be made vegan if you make a few substitutions for the yogurt dressing.

- 1 tablespoon coconut oil
- 1 onion, diced
- 1 red pepper, diced
- 2 garlic cloves, minced
- 1 inch fresh ginger, minced
- 2 cups cooked rice (brown, wild or a combination of both)
- 1 tablespoon cinnamon
- 1 tablespoon allspice
- 1 tablespoon cumin
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon chili flakes
- 1 teaspoon seasoning salt
- 1/2 cup cucumber, chopped
- 1/2 cup green apple, chopped
- 1/2 cup almonds, sliced
- 1/2 cup dried blueberries or cranberries
- 1/2 cup vanilla or honey flavored greek yogurt
- 1 tablespoon cilantro, finely chopped
- 1 tablespoon green onion, chopped
directions
Place the coconut oil into a large pot and saute the onion, red pepper, garlic and ginger over low heat for 10 minutes until softened. Add the rice and the spices and stir to combine thoroughly. Meanwhile, combine the yogurt with the cilantro and set aside. Spoon the rice onto a plate and top with cucumber, green apple, almonds and dried blueberries. Drizzle with cilantro yogurt and finish with a little green onion.
