Pumpkin Swirl Mini-Loaves

I absolutely love all the pumpkin flavored products that come out in the fall, and chocolate is wonderful anytime, so mixing the two together creates a delicious taste combination which works perfectly in these mini loaves. You can also make this recipe into full sized loaf by adding 20 minutes of baking time if desired.
- Ingredients
- 1 1/2 cups all-purpose flour
- 2 tablespoons pumpkin pie spice *(see below for mix)
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup sugar
- 1 1/2 cups pumpkin puree
- 2 eggs, beaten
- 1/2 cup vegetable or coconut oil
- 1/2 cup Greek vanilla yogurt
- 1 cup chocolate chips
DIRECTIONS:
Preheat the oven to 375 degrees. Grease a mini loaf tin or muffin tin with non-stick cooking spray and set aside. In one large bowl, combine all the dry ingredients first and then add the wet ingredients one by one. Stir until a smooth batter is formed. Spoon the mixture into your mini loaf pans until each one is 3/4 full. Place the chocolate chips into a microwave safe bowl and heat in 30 second intervals, stirring, until melted. Using a teaspoon, place a dollop of melted chocolate on the top of each muffin, and using a spoon, swirl together the chocolate and pumpkin batter until a marbled effect is achieved in each one. Place in the oven on the middle rack and bake for 20 minutes or until a toothpick inserted into each mini loaf comes out clean.
*If you cannot find pumpkin pie spice, you can make your own by mixing together the following ingredients:
- 4 tablespoons cinnamon
- 2 teaspoons ground ginger
- 2 teaspoons nutmeg
- 2 teaspoons allspice
- 2 teaspoons ground cloves
