Rice Pilaf with Almonds and Dried Cranberries

This is a great way to use up leftover rice. With just a few ingredients, you can change the flavor dramatically. Or, if cooking rice from scratch, follow package directions and while it’s cooking you can begin the preparation of this dish. If you have it on hand, sesame oil is a nice variation when used in this recipe.
