Mushroom Wine Sauce with Fresh Thyme

This simple mushroom sauce has a beautiful deep flavor and is so easy to prepare. It makes an excellent companion to grilled meat or can also be served as an elegant gravy. If you don’t have fresh thyme, dried can be used in its place, or try other fresh herbs like oregano or rosemary.

  • Ingredients
  • 1/4 cup butter
  • 1 small red onion, diced
  • 4 garlic cloves, minced
  • 2 cups mixed mushrooms (portobello, crimini, oyster) finely chopped
  • 1/2 cup red wine
  • 1 1/2 cups beef broth
  • 1/2  cup whipping cream
  • 1/4 cup brown sugar
  • Salt and Pepper to taste
  • 1 tablespoon chopped fresh thyme

Directions:

Place a skillet on the stove over medium-low heat and melt the butter. Add the onions, garlic and mushrooms and saute for 10-15 minutes until the onions are translucent and the mushrooms are soft. Add the wine to deglaze the pan and cook for another few minutes. Next add the broth, whipping cream, brown sugar, salt and pepper. Bring to a boil and then simmer for 10 minutes over low heat. The sauce should reduce significantly which will make the flavor even more intense. Remove from the stove, add the thyme and stir. Serve with grilled meats such as beef, chicken or pork.
