Shrimp Saganaki
This is one of my favorite Greek dishes. It has fantastic flavor. The juicy garlic shrimp and savory tomato combination finished with feta cheese and fresh basil is absolutely delicious. I also love the versatility of this dish as it can be served alone as an appetizer or in combination with other small dishes and served tapas style. To make it complete meal, serve with rice or pasta as a main course.
- 1/4 cup olive oil
- 1/4 cup chicken stock
- 1/2 cup onions, diced
- 2 cloves of garlic, minced
- 1 pound raw shrimp
- 1 teaspoon chili flakes
- 1 teaspoon dried oregano
- Salt & pepper to taste
- 2 cups canned diced tomatoes, drained
- 1/2 cup tomato paste
- 1 cup cherry tomatoes, halved
- 1 cup white wine
- 1 cup feta cheese, chopped
- 1/2 cup fresh basil, chopped
Directions:
Heat the olive oil and stock in a large skillet over medium heat. Add the onions and garlic and saute for 5 minutes until soft. Add the shrimp along with the chili flakes, oregano, salt and pepper and cook until the shrimp are almost pink. Add the canned tomatoes, tomato paste & cherry tomatoes and bring to a boil. Add the wine, lower to a simmer and sprinkle feta cheese on top. Cover with a tight fitting lid and let sit for another 5 minutes until the cheese is melted. Or place the skillet in the oven and broil until the cheese is melted. Sprinkle with fresh basil and serve.
