Spring Veggies with Brown Rice
Even though we can find most veggies in our grocery stores year round, seasonal vegetables just seem to taste so much better. In this recipe, I have used one of my favorites, asparagus, as the main ingredient but you can substitute green beans or broccoli if you like. This dish can also be eaten at room temperature so it’s a great addition to a picnic.
