Steamed White Fish with Olive Compote
White fish has such a mild flavor it can often be a little bland. I like to mix it up, adding different ingredients to turn a boring fish dish into something to get excited about! In this recipe I used Basa fillets but any white fish will work. Sole, Cod and Haddock are all great options. The feta cheese is an optional ingredient. It adds a nice saltiness to the dish but you can omit it if you like.
- Ingredients
- 4 large basa fillets
- 1 tablespoon olive oil
- 1/2 cup red onion, diced
- 1 clove garlic, minced
- 1 cup tomatoes, chopped
- 1 cup canned black olives
- 1 cup spinach leaves
- Salt & Pepper to taste
- 1/2 teaspoon chili flakes
- 1 teaspoon dried oregano
- 1 cup feta cheese, diced (optional)
Directions:
Preheat the oven to 400 degrees. Place the fish on a baking sheet lined with parchment paper and bake for 10-15 minutes until the fish flakes easily with a fork. Meanwhile, heat the olive oil in a large skillet over medium heat and saute the onion and garlic for 5 minutes until softened. Add the tomatoes, olives, spinach, spices and feta cheese (if using). Cook for an additional 5 minutes until the spinach is wilted. Remove the fish from the oven and serve with a spoonful of the compote on each fillet.
