Stuffed Dried Apricots
This easy and stylish dish works well at the end of the meal when you are wanting something moderately sweet and light. It can also be served as an appetizer or as an accompaniment to a cheese tray. I like to use dried apricots but dates or figs are delicious in this dish too. To increase the sweetness, use a fruit flavored cream cheese such as strawberry or pineapple, or for a savory contrast try herb and garlic.
