Tangy Quinoa Salad
This low fat salad is both high in protein and fiber. It’s quick to assemble and tastes even better the next day! Because there is no dairy it makes a great addition to any picnic and can be served at room temperature. The secret to great tasting quinoa is to cook it in broth instead of water for added flavor.
