Butternut Squash Soup with Ginger
This soup has a nice sweet flavor, and is lovely to make in the fall when squash is widely available. You can substitute acorn squash or canned pumpkin if you like. Although I like to puree this soup like a bisque, you can choose to leave the vegetables chunky for added texture.
