Herb Crusted Fillets
I often buy fish when it’s on sale and freeze it. Pre-cut fillets do not take long to thaw so even if I am rushing around during the day I am able to put this dish together at the last minute. Panko breadcrumbs add nice texture to the crust but regular ones work just as well.
- Ingredients
- 1 lb (approx 4 fillets) of white fish such as cod or haddock
- 3 tbsp mayonnaise
- 3 tbsp bread crumbs
- 1 tbsp dried oregano
- 3 tbsp grated parmesan cheese
Directions:
Heat oven to 450 degrees and place fish onto a foil lined baking sheet. Spoon mayonnaise over the top of each fillet. Combine remaining ingredients in a small bowl and sprinkle over fish. Bake for 10-15 minutes or until the fish is flaky in the center.
Pairs nicely with Roasted Sweet Potatoes
